Strengthening the food safety defense line: Comprehensive guide for maintaining food equipment

Column:Technical Details Time:2026-05-30
The daily maintenance and upkeep of food equipment is a crucial step in ensuring food safety, prolonging the equipment's lifespan, and maintaining stable production. Scientific maintenance management not only reduces downtime due to failures but also effectively prevents cross-contamination of food, safeguarding the health of consumers.

一、Daily cleaning and inspection

After each shift, the equipment must be thoroughly cleaned. Use food-grade cleaning agents and disinfectants to remove residues, grease and water stains on the equipment surface, especially the parts that come into direct contact with food such as hoppers, conveyor belts and cutting tools. Before cleaning, the power supply should be cut off to prevent electric shock or accidental startup. Check the equipment's operating condition, including any abnormal noises, vibrations, odors or temperature rise. Observe whether the pressure gauge, temperature gauge and other instruments are functioning properly. Confirm that the safety guard, emergency stop switch and limit devices are in good condition and functioning effectively.

二、Weekly Deep Maintenance

Special maintenance should be carried out on key parts of the equipment every week. Check the tension and wear of the transmission chain and belts, and adjust or replace them if necessary. Add food-grade lubricating oil to the moving parts such as bearings and gears. Be careful not to over-lubricate and cause leakage and contamination. Tighten loose bolts and terminal blocks to prevent component detachment due to vibration. Check if the electrical circuits are aging or damaged, and whether the junction boxes are properly sealed.

三、Regular professional maintenance

Carry out more comprehensive inspections monthly or quarterly. Calibrate key parameters such as the temperature control system and weighing system to ensure accurate measurement. Clean internal deposits and ventilation filters, test the grounding resistance and insulation performance. Invite professional technicians to disassemble and inspect the core components of the equipment every six months or annually, replace worn parts, and evaluate the overall operating condition.

四、Maintenance precautions

It is essential to use food-grade lubricants to prevent ordinary oils from leaking and contaminating the products. After all maintenance operations, cleaning and disinfection must be carried out to ensure that no tools or parts are left inside the equipment. Establish a "one machine, one file" maintenance record, detailing the time, content and responsible person of each maintenance, to achieve full traceability throughout the process. Consistent and meticulous maintenance is the fundamental guarantee for the efficient and safe operation of food equipment.
